In the shadow of the Khyber Pass, in Pakistan's most ancient city, lies an open-air market that has no equal on earth. The original Namak Mandi - the Salt Market of Peshawar - is not just a place to buy and sell. It is where Pashtun culinary mastery has been passed down, father to son, for over two hundred years. Master butchers who know every cut by touch. Wood fires that never go cold. The unhurried art of slow-roasting whole lamb over charcoal until the outside is perfectly charred and the inside melts like butter. Coarse salt. Fresh green chillies. Ripe tomatoes.
